Bolo Mousse de Maracujá

O maracujá e uma das frutas mais consumidas pelos brasileiros, é por isso que a variedade de sobremesas e bolos feitos com essa fruta é imensa.

O bolo mousse de maracujá é daqueles bolos que não faltam nos aniversários dos lares brasileiros pois além de ser saboroso, é farto, pois combina deliciosas camadas de bolo de maracujá com camadas cremosas de mousse, também de maracujá, coberto com um delicioso marshmallow (merengue italiano). Simplesmente sensacional, ninguém resiste essa tentação e até o mais fitness não resiste aos prazeres desse delicioso bolo mousse!

Modo de preparo do Bolo Mousse de Maracujá

Fatia de bolo mousse de maracujá

Ingredientes

Massa:

  • 5 ovos
  • 100g de margarina ou manteiga
  • 2 xícaras (chá) de açúcar
  • 2 xícaras (chá) de farinha de trigo
  • 150ml de suco de maracujá (ou polpa)
  • 1 colher (sopa) de fermento em pó

Recheio (Mousse):

  • 1 lata de creme de leite sem soro
  • 1 caixa de leite condensado
  • 1 xícara (chá) de suco de maracujá
  • 1 saché de gelatina sem sabor

Cobertura (Marshmallow):

  • 3 claras de ovo a temperatura ambiente
  • 2 xícara (chá) de açúcar refinado
  • 1 xicara (chá) de água

Calda para umedecer o bolo

  • 50ml de água
  • 50g açúcar
  • 1/4 colher (chá) essência de baunilha (opcional)

Modo de preparo

Massa:

  1. Pré-aqueça o forno durante 15min a 180°C.
  2. Separe as claras das gemas. Numa tigela bata as gemas junto com o açúcar e a margarina e incorpore aos poucos a farinha e o suco de maracujá ate formar uma mistura homogênea.
  3. Em outra tigela bata as claras em ponto de neve e, uma vez prontas, incorpore elas delicadamente na mistura anterior
  4. Incorpore o fermento em pó até misturar bem com o resto dos ingredientes.
  5. Leve ao forno durante 35-40 minutos, ou até que, ao enfiar um palito dentro do bolo, este saia limpo.

Recheio (mousse de maracujá):

  1. Prepare a gelatina sem sabor conforme escrito na embalagem. Deixe esfriar.
  2. Num liquidificador ou usando uma batedeira misture o leite condensado, o creme de leite sem soro, a gelatina sem sabor e o suco de maracujá.
  3. Num refratário cubra o mousse com papel filme, colocando ele em contato com a superfície da mesma para não criar uma película de gordura no topo dela. Reserve na geladeira.

Marshmallow:

  1. Bata as claras em ponto de neve e reserve.
  2. Em uma panela ferva o açúcar com à água até obter uma calda em ponto de fio (ou até atingir 115° de temperatura).
  3. Com a batedeira ligada incorpore a calda nas claras em ponto de neve e continue batendo até esfriar.
  4. Decore o bolo ao gosto.

Calda para umedecer o bolo:

  1. Numa panela ferva o açúcar com à água e a essência de baunilha até obter um xarope.
  2. Deixar esfriar completamente.

Dicas para um Bolo Mousse de Maracujá perfeito

Para fazer o bolo mousse de maracujá o requisito principal é ter paciência. Sim, paciência pois são vários procedimentos a serem realizados, e cada um deles precisa do seu tempo. A primeira dica na preparação de bolos é sempre em relação a massa do mesmo, é muito importante bater bem as claras e incorpora-las suavemente ao resto da massa para não perder o ar no momento do assado.

Nós recomendamos usar suco de maracujá na massa pois fica com um sabor mais intenso e natural, no entanto, o uso de polpa ou simplesmente substituir ele por leite também e uma opção. A montagem do bolo é bem importante nesta receita pois para conseguir camadas perfeitas é preciso refrigerar o bolo antes de cobri-lo com o marshmallow. Para isso recomendamos montar o bolo numa forma alta, preferivelmente do mesmo diâmetro onde foi assado o mesmo, recobrindo o interior da forma com papel alumínio ou filme (para facilitar o desmontado e que fique um acabado perfeito), e montando uma camada de bolo seguida por uma camada de mousse e assim sucessivamente. Logo deixar esfriar pelo mínimo por 4 horas na geladeira, para posteriormente decorá-lo com o marshmallow.
